Oh thank you! I’m putting all my weird heart into these tiny 300 word stories. I also love this beet. When I read about how beets have a two year cycle, but most of them are picked before they ever get to see their second year, their flowering stage…it made me want to write about it.
I have! I used to work in produce and was lucky to try so many different beets! Candy cane (chioggia) beets, cylinder beets, and gold beets. But I really want to try the avalanche ones which are purported to be one of the sweetest.
But I still have a deep love of the deep red of beets and the borscht my mother used to make with them.
This is beautiful. I adore it. I feel love and compassion for this beet, especially its reluctance to appear
